Ingredients

  • 1 1/2 lb boneless sirloin steak about 1 inch thick
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 T butter
  • 8 oz linguine
  • 3 cloves garlic minced
  • 6 oz mushrooms, sliced about 2 cups
  • 1 small onion chopped about 3/4 cup
  • 1/4 C white wine
  • 2 Cans (28 oz each) whole tomatoes, drained, chopped
  • 1 T grated Parmesan cheese
  • 1 T chopped fresh parsley

Preparation

Step 1

Sprinkle both sides of steak with 1/2 tsp oregano, 1/2 tsp salt and 1/4 tsp pepper
In skillet melt butter over medium high heat
Add steak; cook, turning once 5-6 minutes per side for medium
Remove from skillet; keep warm
Cook pasta according to package directions
Meanwhile, to same skillet add garlic, cook 1 minute, add mushrooms, onion and remaining oregano and salt and pepper, cook until softened, 4 minutes
Add wine; cook 1 minute
Stir in tomatoes; bring to a simmer
Cook until most of liquid is absorbed, 6 minutes.
Drain pasta; toss with 2 C tomato sauce and transfer to serving platter.
Slice steak; arrange over pasta; top with remaining sauce.
Sprinkle with cheese and parsley
