Salmon and avacado with sesame soy dressing

Ingredients

  • 3 tbsp soy sauce
  • 4-5 salmon fillets
  • 1 tbsp red wine vinegar
  • 1 tsp sesame oil
  • 1/8 tsp sugar
  • 2 tsp fresh ginger, peeled and grated
  • 1 garlc clove minced
  • 1 ripe avacado
  • 1 tsp sesame seeds
  • 1 tsp lemon juice

Preparation

Step 1

preheat broiler. brush salmon with 1 tbsp soy sauce. place on a baking sheet and broil salmon for 5 min or until cooked through. in a small bowl wisk together remaining soy sauce, rice wine vinegar, lemon juice, oil, sugar, ginger and a pinch of salt until sugar is disolved. quarter and peel avacado and cut cross wise into 1/2 inch slices. add avacado to dressing and gently turn with a rubber spatula to coat. plate salmon and divide avacado and dressing between plates. sprinkle sesame seeds
