Ingredients

  • 1 brisket -- (5-7 lbs)
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 large onions -- coarsely chopped
  • 2 large garlic cloves -- minced
  • 2 Tablespoons brown sgar
  • 2 Tablespoons Worcestershire sauce
  • 1 Tablespoon dry mustard
  • 1 Tablespoon white vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 14 ounces ketchup
  • 2 large bay leaves

Preheat oven to 350.

In a large saute pan over high heat, in about 5 Tablespoons oil, saute brisket until browned, about 5 to 7 minutes. Season with salt and pepper. Brown the other side and season with salt and pepper.

Meanwhile, combine, onions, garlic, sugar, Worcestershire sauce, mustard, vinegar, chili powder, paprika, ketchup and 1 1/4 cups water. Transfer browned brisket to a roasting pan. Place the bay leaves on top and pour ketchup mixture over it. Cover with foil and roast for 2 hours.

Remove from oven and uncover. When the brisket is cool enough to handle, cut across the grain and put back in the liquid. Re-cover and return to oven for 1 1/2 to 2 hours or until the meat is tender enough to cut with a fork.
