  • 1 large eggplant
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 Tablespoon oil
  • Allspice or pepper
  • 1 8 ounce can tomato sauce
  • 1/2 cup rice -- uncooked
  • 1/4 cup water

Preparation

Step 1

Peel eggplant and slice. Reserve 1/2 cup of tomato sauce for the top.

Mix meat, spices, oil, rice, 1/4 cup water and tomato sauce. Add more water if necessary to blend well. Put a little more oil on bottom of pan and place half of eggplant slices on bottom. Cover with meat mixture and put more slices on top. Pour on remainder sauce. Add 1 cup water and cook on low flame until meat and rice are cooked.
