Ingredients
- 1 cup dry red or white table wine
- 2 Tablespoons soy sauce
- 1 small onion -- peeled and grated
- 2 cloves garlic -- finely minced
- 1 3 to 3.5 pound brisket -- or roast
- 1 or 2 medium onions -- peeled, halved and thinly sliced
- 1 or 2 cups fresh mushrooms

Step 1
In nonaluminum pot, mix together the marinade ingredients. Add roast and turn it over in the marinade so that it is completely coated. If time permits, let meat marinate for a few hours up to overnight in the refrigerator, turning it occasionally.
Preheat oven to 325. Scatter the sliced onion and mushrooms around the roast. Cover the pot tightly. Cook in oven for 2 1/2 to 3 hours, basting occasionally.
