Broccoli--Carrot--Bacon Bake with Cooking Cream 0 Picture

Ingredients

  • Cooking cream:
  • 6 cups fresh broccoli florets
  • 2 carrots, sliced
  • 1 recipe Cooking Cream (see below)
  • 2 green onions, sliced
  • 3/4 cup grated cheddar cheese
  • 1/4 cup bacon bits (I think it was 3-4 slices, crumbled)
  • 8 oz. cream cheese
  • soften and mix with 1/2 cup chicken broth, 1 minced garlic clove, dash of pepper and thyme.

Preparation

Step 1

Heat oven to 425 degrees.

Add broccoli and carrots to saucepan of boiling water and cook 2-3 minutes or until crisp-tender. Drain, reserving 1/4 cup cooking water. Place veggies in a large bowl.

In the meantime, make the cooking cream. Add the reserved water, cooking cream and onions. Stir until veggies are evenly coated with sauce.

Spoon into casserole dish sprayed with Pam, and top with shredded cheese and bacon bits. Cover. Bake 25 minutes or until heated through. Uncover and cook an additional 5 minutes or until cheese is brown and bubbly. Enjoy!
