  • 1 whole leftover challah
  • 4 eggs
  • Salt and pepper
  • 1 onion -- chopped
  • 3 carrots -- chopped
  • 1 green pepper -- chopped
  • Paprika -- garlic powder

Preparation

Step 1

Pour boiling water or vegetable stock over the challah (enough to just soak the challah). The challah will become dough-y. Leave it for a little while you saute the vegetables.

Meanwhile, saute the vegetables until soft. Add eggs to the challah. Mix well. Add spices, and sauteed vegetables. Pour into greased pan and bake at 350 for 50-60 minutes until brown.
