Ingredients
- 1/4 cup orange marmalade
- 1 Tablespoon mustard
- 3/4 teaspoon ground ginger
- 1/8 teaspoon red pepper
- 4 boneless skinless chicken breast halves
- 3 Tablespoons reduced calorie margarine
- 1/2 teaspoon grated orange rind
- 1/4 teaspoon ground ginger

Preparation
Step 1
Combine first 4 ingredients in a small bowl, stirring well with a wire whisk. Brush half of the marmalade mixture evenly over chicken breast halves. Coat grill with cooking spray. Cook 10 minutes on each side, brushing frequently with remaining marmalade mixture.
Combine margarine, orange rind and ginger in a small bowl, stirring to blend. Spoon 1 T. over each chicken breast half.
