Ingredients

  • 1 cup quinoa
  • 1 cup red quinoa
  • 4 cups chicken stock
  • 1 small red onion -- cut into 1/2 inch dice
  • Neck of 1 small butternut squash -- peeled cut into 1/4 inch dice (about 1 1/2 cups)
  • 3 cloves garlic -- minced
  • 1 tablespoon cajun seasoning
  • 2 scallion -- sliced thinlhy

Preparation

Step 1

Place quinoa with chicken stock in a pot. Bring to a boil. Turn the heat down and simmer for 15-18 minutes until all the water is absorbed.

Heat oil in a skillet. Add onion, squash, and garlic. Saute until the vegetables are shiny and soft, about 6-8 minutes. Add cajun seasoning, salt and pepper, and scallion. Saute 3 minutes. Remove from heat. Stir quinoa into vegetables. Serve as is or in a bundt mold.
