Ingredients
- 1 cup dried multi bean mix
- 6 cups water
- 1 14 ounce can whole tomatoes with juice
- 3 cloves garlic
- 2 ribs celery -- chopped
- 2 medium carrots -- chopped
- 1/2 medium onion -- chopped
- 1/2 cup pearl barley
- 1 pound skirt steak -- cut into chunks
- 1 1/2 Tablespoons salt
- 2 teaspoons Italian herb blend
- Pepper -- to taste
- 1/2 ounce dried porcini mushroom
- 3 cups frozen spinach -- thawed
- 1 1/2 Tablespoons balsamic vinegar

Preparation
Step 1
Place all ingredients (except spinach and vinegar) in a crock pot. Cook on low for about 8 hours. Stir in the spinach and vinegar, cover and let soup cook until spinach wilts, about 5 minutes.
