  • 1 medium eggplant
  • 1 cup ricotta cheese
  • 1/2 cup oil
  • 2 to 3 cups marinara sauce
  • 2/3 cup parmesan cheese
  • grated mozzarella cheese

Preparation

Step 1

Peel and thinly slice eggplant lengthwise. Oil and broil the slices 3 to 4 minutes on each side. Lay out on paper towel. Spoon a tablespoon of ricotta cheese into middle of each slice and roll up. Lay rolls into baking dish. Cover with marinara sauce and cheeses. Bake until heated through and cheese runs into sauce.
