Ingredients

  • Crust:
  • 12 tsp Cold margarine
  • 1/3 cup Sugar
  • 1 ex lg Egg
  • 1/2 tsp Vanilla extract
  • 2 cups Flour
  • Filling:
  • 1 cup Pecan pieces
  • 2 Tbsp Margarine
  • 3/4 cup Karo syrup
  • 1/2 cup Sugar
  • 1 pinch Salt
  • 2 ex lg Eggs
  • 1/2 tsp Vanilla extract
  • 1 1/2 cups Whole pecans

Preparation

Step 1

Crust:
In mixer with paddle cream margarine and sugar on medium till fluffy.
Beat egg and vanilla lightly with fork and add. Mix till incorporated.
Reduce speed to low and add flour 1 cup at a time till ball of dough forms. Pat into large round.
Refrigerate 3-4 hours.

Filling:
Preheat oven to 350.
Roll dough on floured surface to 11” round.
Roll onto pin and unroll on center of plate.
Press into pan. Trim dough into ½” overhand and flute the edges.
Spread broken pecans on bottom of shell in an even layer.
Melt margarine, add syrup, and heat till dissolved.
Add sugar and cook over low heat. Stir in salt.
Remove and let cool, stirring occasionally.
Beat in egg and vanilla.
Pour into pie shell on top of broken pecans.
Place whole pecans in circles and press down.
Bake for 45 minutes (till crust is golden and nuts are browned).
