Ingredients
- 2 3 pound chickens -- quartered or cut up
- 1 large onion -- sliced into rings
- 2 stalks celery -- sliced
- 1 green pepper -- sliced
- 1 yellow squash -- optional
- 12 mushrooms -- optional
- 4 potatoes -- optional
- Paprika -- optional
- SAUCE
- 4 Tablespoons oil
- 2 Tablespoons vinegar
- 1/3 cup ketchup
- 1/3 to 1/2 cup honey

Preparation
Step 1
Preheat oven to 300. Line bottom of baking pan with onion rings, celery, green pepper, yellow squash and mushrooms. Combine sauce ingredients in a small bowl, mixing by hand until smooth. Cover both sides of each piece of chicken in sauce. Place chicken skin side up on top of vegetables. Pour any remaining sauce over chicken. Bake covered for 2 hours.
