Ingredients
- 3 red peppers -- sliced
- 3 green peppers -- sliced
- 2 yellow peppers -- sliced
- 4 red onions -- sliced
- 3 tomatoes -- chopped
- 1 can corn -- drained
- 1 1/2 pounds cooked chicken (optional) -- cut into 1" cubes
- 1 pound pasta -- cooked and drained
- DRESSING
- 1 1/2 cups mayonnaise
- 7 ounces salsa
- 1/3 cup ketchup
- 1/2 teaspoon chili powder
- 1/8 teaspoon cumin

Preparation
Step 1
Saute onions in oil for 10 minutes. Add colored peppers. Season with salt and pepper. Cook until vegetables are soft, approx. 15 minutes.
In a large bowl, combine onion-pepper mix with tomatoes, corn and pasta. Add chicken, if using. Combine dressing ingredients and pour over salad and toss.
