Ingredients

  • 2 cups uncooked brown rice
  • 4 cups water
  • 4 15 ounce cans black beans
  • 2 15 ounce cans pinto beans
  • 1 10 ounce can corn
  • 1 10 ounce can diced tomatoes and green chiles
  • 16 10 inch flour tortilla
  • 1 pound Pepper Jack cheese -- shredded

Preparation

Step 1

Cook brown rice in water, about 35 to 40 minutes until tender. Combine rice with beans, corn, tomatoes and cheese.

Divide mixture among tortillas, and roll up. Wrap individually in foil and freeze.
