Ingredients

  • 1 1/2 pounds red potatoes
  • 1/3 cup fat free mayonnaise
  • 1 1/2 Tablespoons cider vinegar
  • 2 or 3 Tablespoons horseradish
  • 1/4 teaspoon seasoned salt
  • 1 cup halved cherry tomato
  • 1/2 small sweet onion -- finely chopped
  • 2 stalks celery -- finely chopped

Preparation

Step 1

Cook the potatoes in a large pot of water until tender, 15-25 minutes. Drain and cool completely.

Combine the mayo, vinegar, horseradish, salt in a large bowl. Add potatoes, tomatoes, onion and celery. Toss gently to coat. Cover and refrigerate at least 2 hours.
