Cauliflower Kugel with Mushrooms

Ingredients
- 1/2 large cauliflower
- 3 Tablespoons oil
- 1 medium onion -- chopped
- 1 1/2 cups mushrooms -- quartered
- 2 large eggs
- 2 Tablespoons crushed potato chips
- 1/2 teaspoon paprika

Step 1
Preheat oven to 375. Cut cauliflower into medium florets. Boil until tender. Drain and cool. Puree in food processor, leaving a few chunks, then transfer to a bowl.
Saute onion in oil for approx. 5 minutes. Add mushrooms and saute together over medium heat for 5 minutes or until light brown.
Add eggs and potato chips and mix well. Season with salt and pepper. Add in mushroom mixture. Grease a 9 inch square baking dish. Spoon in cauliflower mixture. Sprinkle 1 tablespoon of oil over the top and sprinkle with paprika. Bake 30 minutes or until set.
