Ingredients
- Enough potatoes to make 5 Cups Mashed Potatoes (do not add milk or butter)
- 2 Eggs
- Salt to taste (approx. 1 Tablespoon)
- Approx. 5 Cups flour (about 1 cup flour per cup of potatoes)

Step 1
Mash your potatoes while they are hot. Then cool in refrigerator for an hour or longer as needed.
Fill a large pot with water and start to boil.
Make a mound of the cooled mashed potatoes on a kneading surface and open the middle. Add the eggs, flour (amount of flour will depend on consistency of your potatoes)and salt. Knead (adding flour) until it is a bread dough consistency. Taste to see if you have enough salt.
Knead/roll dough into a long skinny log. Slice off individual dumplings. Shape and place in boiling water. Only add enough dumplings at a time so the water will continue to boil or your dumplings may get soggy.
This will take much practice. If your potatoes are jucier, you may need more flour or if you like your dumplings to be harder, add an extra egg. Maybe boil one dumpling and see how it tastes after it cools and adjust your dough as needed before doing more.
