Ingredients

  • 12 oz semisweet chocolate, finely chopped
  • 4 oz unsweetened chocolate, finely chopped
  • 6 oz (1 1/2 sticks) unsalted butter, cut into large pieces
  • 4 large eggs
  • 1 1/2 cups sugar
  • 1 tbs vanilla extract
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 12 oz (2 cups) semisweet or bittersweet chocolate chunks
  • 9 oz (1 1/2 cups) milk chocolate chunks
  • 9 oz (1 1/2 cups) white chocolate chunks

Step 1

Preheat oven to 350. Line 2 half-sheet pans with parchment paper. The half-sheet pans must cool completely between uses! If you have four pans that is better, the pans can cool while another set is baking.

Melt semisweet & unsweetened chocolate in double broiler with butter. Stir until smooth. Cool slightly to warm room temp.

Place eggs, sugar and vanilla in mixer’s bowl and beat on high speed using balloon whisk attachment. Beat until light and fluffy, about 2-5 minutes. Fold in chocolate/butter mixture until no streaks remain.

Place flour, baking powder and salt in bowl and mix with whisk. Fold into chocolate batter until just combined. Fold in all the chocolate chunks.

Use ¼ cup sized ice cream scoop or measuring cup and drop onto cookie sheet.

Bake 14 minutes. Do not overbake. Look for tops and edges to be dull, but insides and middle should be soft. Let cool on pan.

***Reserve about a quarter of all chunks. Scoop out cookies and press some chunks into cookie tops. Visually makes a big difference!

Makes 30 cookies.
