Step 1
In a large saucepan cook the chopped onion, pepper, celery, mushrooms, and garlic in oil till tender but not brown. Add the tomato juice and bottled barbecue sauces. Bring to boiling; reduce heat. Simmer, covered, for 1 hour, stirring occasionally. Uncover; simmer 50 minutes more or to desired consistency, stirring sauce occasionally. Makes 3 cups sauce.
