Ingredients
- 1 tablespoon olive oil
- 1 cup chopped green bell pepper
- 1 cup yellow bell peppers, or red; chopped
- 1 tablespoon minced garlic (about 4 cloves)
- 1/8 teaspoon crushed red pepper
- 1/2 cup water
- 1/4 teaspoon sage
- 2 cans cannelini beans (15-ounce) rinsed and drained
- 1 can diced tomatoes (14.5-ounce) undrained
- 1/4 teaspoon pepper

Preparation
Step 1
1. Heat olive oil in a large skillet over medium-high heat. Add bell peppers, and cook 5 minutes or until tender, stirring frequently.
2. Add garlic and crushed red pepper; cook 1 minute, stirring constantly. Stir in water, sage, beans, and tomatoes; bring to a boil. Reduce heat; simmer 10 minutes or until thick, stirring occasionally. Sprinkle with black pepper.
Notes: These were great, healthy, and super easy. Made just as directed.
