Ingredients
- 4-5 lb tenderloin of beef, trimmed of fat
- 1/2 cup bacon fat, congealed
- 1 tsp kosher salt
- 1 tsp black pepper

Step 1
Rub the entire outside of tenderloin with bacon fat and sprinkle with salt and pepper. Preheat oven to 400. Place roast in oven and bake until loin reaches 120 degrees with a meat thermometer (rare), approx 30-45 minutes. Allow to rest for 15 minutes before slicing. Carryover heat will continue to cook the meat while it rests, raising the temp 10-15 degrees.
Don't tent the foil while resting, this may cause the crust to soften. Not allowing the meat to rest and slicing meat too early may cause meat to be dry.
