  • 5 large yukon gold potatoes (2 1/4 pounds)
  • 1 large onion -- halved
  • 1 large egg
  • 2 Tablespoons flour or matzo meal
  • salt and pepper

Preparation

Step 1

Peel the potatoes and immerse them in very cold water as you finish each one.

Remove the potatoes from the water and grate them with the onion.

Transfer onions and potatoes to a strainer, squeeze out all the water into a bowl. Let the potato starch settle in the bowl and pour out as much water as possible, leaving the starch in the bowl. Add the potatoes and onions to the starch, and mix in the egg, flour, salt and pepper.

Fry in a skillet.
