Ingredients

  • 2 Tablespoons oil
  • 1 onion -- diced
  • 2 cloves garlic -- crushed
  • 1 pound flanken -- spiced witih salt and pepper
  • 1 19 ounce can tomato juice
  • 1/2 can water -- (about 10 ounces)
  • 3 Tablespoons lemon juice
  • 1/2 teaspoon black pepper
  • 6 ounces apricot jam
  • 1 head cabbage -- shredded

Preparation

Step 1

Heat oil in a large pot over medium heat. Add onion and garlic, saute about 5 minutes. Add flanken to the pot and brown, 4 minutes on each side. Add cabbage and saute 10 minutes until cabbage begins to soften.

Add tomato juice, water, lemon juice, pepper and apricot jam. Cover, bring to a simmer, and cook for 2 1/2 hours.
