  • 3/4 cup wild rice
  • 2 Tablespoons oil
  • 8 ounces sweet Italian sausage -- casings removed
  • 2 leeks -- halved lengthwise and sliced thinly
  • 3/4 cup basmati rice
  • 2 Tablespoons fresh parsley

Step 1

Bring a large pot of salted water to a boil; add the wild rice and cook until just tender, about 40 minutes; drain.

Meanwhile, heat oil in a deep skillet over medium heat. Add sausage and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Pour off all but 3T of the drippings. Add leeks and cook, stirring occasionally, until leeks are wilted, about 5 minutes. Stir in the basmati rice and cook until lightly browned, 1 to 2 minutes. Add 1 1/3 cups water and bring to a boil. Reduce the heat to low and simmer, covered, until rice is tender, about 15 minutes. Remove from heat and set aside, covered.

Stir in prepared wild rice and parsley.
