Ingredients
- 2 cups uncooked basmati rice
- 1/2 cup dried currants
- 1/2 cup pistachios -- toasted
- 4 to 6 scallion -- sliced
- 1/2 cup oil
- 1/4 cup or more lemon juice
- 2 teaspoons salt
- 1 Tablespoon curry powder
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- cayenne pepper -- to taste

Preparation
Step 1
Cook rice.
Combine oil, lemon juice, salt, curry, cumin, and pepper. Add to hot rice when rice is done. Add in currants, pistachios, and scallion.
