  • 8 Tablespoons butter -- melted
  • 1 cup flour
  • 1/4 cup brown sugar -- packed
  • 1 pinch salt
  • 1/2 cup chopped almonds -- optional
  • TOPPING
  • 1 package frozen strawberries in syrup -- thawed
  • 3 large egg whites
  • 1 cup sugar
  • 1 Tablespoon lemon juice -- or to taste
  • 1 pinch salt
  • 1 cup heavy cream -- whipped to soft peaks

Preheat oven to 400. Grease a 9x13 inch pan.

For the crust: Stir together the melted butter, flour, brown sugar and salt in a medium bowl. Stir in the almonds, if using. Pat the mixture into the greased pan and bake for 10 to 12 minutes, or until it's lightly browned. Cool the crust thoroughly. then take it out of the pan and crumble it all up, and put it back into the pan.

For the topping: Beat together the strawberries, egg whites, sugar, lemon juice, and salt in a large bowl with an electric mixer for 15 minutes. You need to incorporate a lot of air into the mixture to get it "mile-high". After 15 minutes or so of hard beating, it should be very thick, almost like marshmallow fluff, and a very, very pale pink. Fold in the whipped cream. Spread over the crust and freeze for at least 6 hours or overnight.
