Ingredients
- 1 onion, chopped
- 4 cups chicken broth
- 2 cups water
- 1 can crushed or diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 bay leaf
- 1 teaspoon sugar (optional)
- Cilantro (optional)
- Juice of 1 lime
- 1 cooked chicken, shredded
- 1 can black beans
- 1 bag frozen corn
- Tortilla chips
- Monterey Jack or Cheddar Cheese
- Avocado, diced

Preparation
Step 1
• Sauté onion in oil. Add chicken broth, water, tomatoes, and spices. Bring to boil. Reduce heat to simmer.
• Add chicken, corn, black beans and lime. Simmer until corn is warmed through.
• Ladle soup into bowls and top with tortilla chips, cheese and avocado.
