Ingredients

  • 16 ounces frozen chopped spinach
  • 1 large onion -- chopped
  • 1 Tablespoon oil
  • 2 cups fresh mushrooms -- sliced
  • 1 cup mayonnaise
  • 3 eggs
  • 1 cup non-dairy creamer
  • 3 Tablespoons potato starch
  • Salt and pepper

Preparation

Step 1

Thaw spinach. In a skillet saute onion in oil until lightly browned. Add mushrooms and saute for additional 10 minutes. Combine with spinach and remaining ingredients. Pour in 9 x 13 inch pan and bake for 1 hour at 350.
