Sweet Sausage Meat Loaf

Ingredients

• 2 pounds lean ground beef
• 2 small zucchini
• 1 pound sweet Italian sausage -- mashed into small pieces
• 2 cups fresh bread crumbs
• 1 medium onion -- chopped
• 5 cloves garlic -- minced
• 1 1/2 Tablespoons fresh oregano -- chopped
• 2 teaspoons salt
• 1 teaspoon pepper
• 1/2 cup tomato sauce
• 3 large eggs
• 1/2 cup dry red wine
• 1/2 cup tomato paste
• 1 teaspoon brown sugar

Preparation

Step 1

Preheat oven to 375. Combine beef, zucchini, sausages, bread crumbs, onion, garlic, oregano, salt and pepper. Mix into tomato sauce, eggs, and wine. Place meat into a large loaf pan. Combine tomato paste and brown sugar and brush mixture over loaf.

Bake meat loaf uncovered about 1 hour, 15 minutes.
