Ingredients
- 1 8 ounce package medium wide noodles
- 4 Tablespoons oil -- divided
- 4 large eggs
- 1/3 cup sugar
- 1 1/4 cups orange juice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup diced mixed dried fruits
- 1/4 cup raisins
- 1 medium apples -- diced

Step 1
Cook the noodles. Coat a 9x13 baking dish with cooking spray.
Drain the noodles, put them back into the pot off the heat and toss with 2 T. of oil to keep them from sticking together. Set aside to cool. Preheat oven to 350.
In a medium bowl, use a fork to beat the eggs with the sugar until well mixed. Beat in the remaining 2 T. of oil. Beat in the orange juice, cinnamon, ginger, and salt. Stir in the mixed fruit, raisins, and apple. Add mixture to the cooked noodles in the pot and stir until all the ingredients are evenly distributed. Transfer the noodle mixture to the prepared dish.
Cover with foil and bake at 350 for 40 minutes. Remove foil and continue baking uncovered for 10 to 20 minutes longer until firm and set.
