Ingredients
- MARINADE
- 6 Tablespoons oil
- 2 Tablespoons minced garlic
- 1/2 teaspoon cayenne
- 3 Tablespoons dijon mustard
- 1/2 cup fresh basil -- chopped
- 6 boneless skinless chicken breast halves
- COATING
- 1 6 ounce bag potato chips
- 1 cup cracker pieces -- crushed
- 1/2 cup basil -- chopped
- 1/2 teaspoon black pepper

Step 1
For the marinade: Combine oil, garlic cayenne pepper, mustard, and basil. Add chicken to the marinade. Cover and refrigerate for 1 to 4 hours.
For the coating: Mix chips, crackers, basil and pepper. Drizzle the melted butter over the crumb mixture and toss until well combined.
Heat oven to 450. Butter a baking sheet. Roast the chicken until it is crisp, brown and cooked through, 25 to 30 minutes. Check after 15 minutes. If the chicken is getting to brown, reduce the heat to 400 and add 5 minutes to the total cooking time.
