- 2 pounds Idaho potato -- cut into chunks
- 1/4 cup oil
- 1 Tablespoon Caribbean Jerk seasoning
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/4 teaspoon ground allspice

Step 1
Preheat oven to 425. Place potato chunks in a mixing bowl. Stir together oil and spices. Pour spices over the potatoes and pour over potatoes. Transfer to 9 x 13 pan. Bake, uncovered, stirring occasionally, for 30 minutes or until potatoes are fork tender.
