Pineapple Coffee Chicken

Ingredients

• 2 chickens -- cut up
• 1 8 ounce can crushed pineapple
• 2 cups ketchup
• 1/4 cup brown sugar
• 2 cloves garlic
• 1/2 teaspoon ginger
• 1 teaspoon salt
• 1/2 cup strong coffee

Preparation

Step 1

Mix all ingredients and pour over chicken. Marinate overnight. Bake at 350 for 1 to 1 1/2 hours. Baste frequently with pan sauces.
