- 1/2 cup warm water
- 1 envelope (2 1/4 teaspoons instant yeast
- 1 1/4 cups water, at room temperature
- 2 Tablespoons extra virgin olive oil
- 4 cups bread flour
- 1 1/2 teaspoons salt

Step 1
Measure 1/2 cup warm water into a 2 cup measuring cup. Sprinkle the yeast over the water and let it stand until swollen, about 5 minutes. Add enough room temperature water to equal 1 3/4 cups and then add oil.
Place the flour and salt in the bowl of a mixer. Briefly mix to combine. Slowly add the liquid ingredients and continue to mix at low speed until a cohesive mass forms Knead the dough until smooth and elastic, about 5 minutes. Form the dough into a ball, put it in a deep oiled ball, cover with plastic wrap.
After the dough has doubled in size (about 2 hours), deflate it by pressing down on it with your fist. Divide and shape the dough as in the recipe.
