Ingredients

  • 1/2 seedless cucumber, peeled and grated
  • 1/2 c evoo
  • 2 lemons juiced
  • 4 cloves garlic, minced
  • 1/4 c chopped parsley
  • 1 1/2 tsp dried greek oregano
  • 1 1/2 lbs boneless, skinless chicken breast cut into 1 1/2" chunks
  • 1 c greek yogurt
  • 2 t finely chopped mint leaves
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 4 garlic naan

Step 1

1) place cucumber in strainer, sprinkle with salt and let sit 20 minutes. press out liquid

2) meanwhile, in large bag combine evoo, half of lemon juice, 3/4 of garlic, parsley and oregano. season the chicken with salt and pepper, drop into bag and marinate for 10 minute while you preheat broiler. scatter across broiler pan and cook til charred turning once. (about 10 -12 minutes)

3)heat griddle over medium heat. in food processor, puree drained cucumber, yogurt, remaining lemon juice, garlic, mint, coriander and cumin. season with salt and pepper.

4) splash a little water on griddle and add naan 2 at a time. cook turning once til they crisp up, about 2-4 minutes.

5) pile the chicken onto the naan and top with tzatziki.

optional: add diced tomato, sliced onion, hot peppers
