Ingredients

  • 1 chicken -- cut into 8ths.
  • 1/4 cup lime juice
  • 1 clove garlic
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • pepper -- to taste
  • 3 teaspoons flour
  • 1 cup cornmeal
  • 1/2 teaspoon paprika
  • 2 tablespoons margarine

Step 1

In a glass or plastic dish, combine lime juice, garlic, chili powder, salt, cumin and pepper. Stir to mix well. Marinate chicken in mixture for at least one hour.

Preheat oven to 375. Lightly oil a shallow baking dish large enough to hold the chicken in a single layer. Combine cornmeal, flour and paprika.

Remove chicken from marinade and roll in cornmeal mixture. Place in baking dish and dot with bits of margarine.

Bake for 1 hour, or until brown and crisp.
