Ingredients

  • 5 chicken cutltes -- cut into strips
  • 1 cup rice flour
  • 1 cup cold seltzer
  • 2 egg whites
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 4 ice cubes
  • 1 cup fine dried coconut

Step 1

In a medium bowl, combine rice flour, seltzer, egg whites, sesame oil, salt and curry powder. Batter does not need to be smooth. Add the ice cubes and stir around. They do not need to melt. In a shallow bowl, place coconut.

Heat oil to 365-375 degrees. Dip chicken strips into batter, shake off excess batter and roll in coconut. Fry and drain.
