Ingredients
- 2 chickens -- cup up
- 2 cups flour
- 1 cup rice flour
- 1 cup yellow cornmeal
- 3 Tablespoons sweet paprika
- 1 Tablespoon mustard powder
- 1 Tablespoon cumin
- 2 Tablespoons cayenne pepper -- optional
- 3 large eggs
- 1/4 cup cold water

Preparation
Step 1
Season chicken with salt and pepper. Combine dry ingredients in large shallow dish. Whisk the eggs and the water together in another large shallow dish.
Lightly dredge the chicken in the flour mixture. Next, dip the chicken into the egg mixture. Finally, place the chicken back into the flour mixture and allow to sit in the flour mixture for several minutes.
Deep fry or oven fry.
