Sweet Potatoes - Shepherd's Pie

I've added an optional gravy mix to add to the meat mixture from a different recipe. That recipe called for ground sirloin, mushrooms and frozen peas.

Ingredients

  • 1/2 lb. sweet potato (1 large), peeled, cut into 2" pieces
  • 2 Tbsp. Philadelphia Chive & Onion Cream Cheese
  • 1/2 lb. extra-lean ground beef
  • 1 cup sliced fresh mushrooms
  • 1 green onion, chopped
  • 1 Tbsp. Kraft Light Balsamic Vinaigrette Dressing
  • 1 tea. flour
  • 1/4 cup water
  • 1 cup frozen green beans
  • .
  • OPTIONAL GRAVY: (from a different recipe)
  • 2 Tbsp, butter
  • 2 Tbsp. flour
  • 3/4 cups dark beer
  • 1 cup beef broth (or 1 1/2 cup broth if not using beer)
  • 3 Tbsp,. worcestershire
  • 2 Tbsp. dijon mustard

Preparation

Step 1

Heat oven to 375 degrees

Microwave potatoes in small microwaveable bowl on High 4 minutes, or until tender. Mash until smooth. Add cream cheese; mix well.

Brown meat with mushrooms and onions in dressing in large skillet; drain. Mix flour and water. Add to meat mixture; cook 2 minutes or until slightly thickened, stirring constantly. Sitr in beans; spoon into 2 (2 cup) ramekins sprayed with cooking spray. Cover with potato mixture.

OPTIONAL GRAVY: Heat small sauce pan or skillet over medium high heat. Add butter to melt and whisk in flour for 1 minute. Add beer, cook until reduced, about 1-2 minutes. Add beef stock and worcestershire, season with salt and pepper. Cook until thickened slightly, then whisk in mustard. Stir the gravy into the meat mixture and top with potaotes.


Bake 15 minutes or until heated through.
