Ingredients

  • 1 pound carrots -- peeled
  • 3 large eggs
  • 1/2 cup oil
  • 3/4 cup sugar
  • 3 Tablespoons flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • TOPPING
  • 1/4 cup cornflake crumbs
  • 3 Tablespoons brown sugar
  • 2 Tablespoons margarine
  • 1/4 cup chopped nuts
  • Ground cinnamon

Preparation

Step 1

Cook carrots until soft. Mash.

Preheat oven to 350. Add eggs, oil, sugar, flour, baking powder and vanilla to mashed carrots. Mix until combined. Place into 9" round dish or 8 (4 ounce) ramekins.

Mix topping ingredients. Sprinkle over souffle. Bake for 40 minutes.
