Ingredients

  • 1 tablespoon unsalted butter
  • 6 oz (170gr) white chocolate
  • 2 cups (120gr) mini marshmallows
  • 1 can (14oz/400gr) sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 6 oz (170gr) bittersweet chocolate
  • 1/4 teaspoon mint extract
  • 2-3 peppermint candy canes

Step 1


1. Line 8x11.5in (20x29cm) baking dish with foil and butter the bottom and sides of the pan.
2. Place the peppermint candy canes in a ziplock bag, and roll the rolling pin over to crush the candies. Set aside.
3. Place the white chocolate in a medium heatproof bowl. Set aside.
4. In a double boiler, combine marshmallows, condensed milk and vanilla extract. Melt everything over simmering water until smooth, stirring frequently, about 5 minutes. When the mixture is smooth, pour half of the mixture into the bowl with white chocolate. Set aside.
5. Return the marshmallow mixture back on the double boiler, add bittersweet chocolate and stir until the chocolate is melted and the mixture is smooth. Pour it into the prepared dish lined with buttered foil.
6. Now, quickly put the marshmallow mixture with white chocolate on the double boiler, add mint extract and stir until the white chocolate is melted and the mixture is smooth. Pour the mixture over bittersweet chocolate fudge. Using a toothpick, swirl the mixture to create beautiful swirled effect. Sprinkle the crushed peppermint candy canes on top.
7. Leave the fudge to cool. Once cooled, put it in the fridge for at least 2 hours, or overnight, to set. Cut into 24 squares and serve.
