Ingredients

  • 3 medium Itlalian eggplants -- unpeeled, cut into 3/4 inch dice
  • 1/2 cup ketchup
  • 2 tablespoons white vinegar
  • 1 tablespoon lemon juice
  • 3 cloves minced garlic
  • 1/8 teaspoon ground cumin
  • 2 red bell pepper -- cut into 1/2 inch dice
  • 1 large onion bagel -- very thinly sliced

Preparation

Step 1

In a large bowl, mix ketchup, vinegar, lemon juice, garlic and cumin.

In a deep pot, heat enough oil to 350. Add cubed eggplant in batches and fry each batch until golden. Remove with slotted spoon and drain to remove excess oil. Transfer to bowl of sauce.

Add red pepper and onion to the hot oil and fry until limp and shiny, about 3-4 minutes. Drain to remove excess oil and add to eggplant.

Cover and refrigerate. Garnish with parsley.
