Ingredients

  • 3/4 cup mayo
  • 6 oz reduced fat cream cheese such as Neufchatel at room temperature
  • 1 1/4 cups (4.5 ounces) grated sharp cheddar
  • 1 1/4 cups (4.5 ounces) grated smoked Gouda (smoked with bacon is great too)
  • 1 jar ( 4 ounces) chopped pimientos drained reserve 1 tbsp of the liquid
  • 1/4 cup chopped scallions
  • 2 tbsp chopped flat-leaf parsley, plus more for garnish
  • 1/2 tsp smoked paprika
  • 1/4-1/2 tsp cayenne
  • 1/4 tsp garlic powder

Preparation

Step 1

In medium bowl, whisk the mayo and cream cheese until smooth. Mix in the cheddar, gouda, pimientos and their liquid, scallions, parsley, and all the spices, season with salt and pepper to taste. Cover and chill up to one day.

Serve with veggies or crackers for dipping. Makes good sandwiches as well
