Ingredients
- 3 loaves gefiltefish
- 10 ounces chopped frozen spinach
- 3 medium carrots -- peeled and sliced

Preparation
Step 1
Defrost fish and spinach. Preheat oven 375.
Place each oaf of softened fish in a medium bowl. Boil or steam carrots until soft. Cool. Process carrots in a food processor until lightly chopped and combine with one loaf of fish.
Combine second loaf of fish with spinach, and leave the third loaf separate.
Spray two 5 x 9 loaf pans with cooking spray. Layer spinach mixture at the bottom of pan. Pat gently to flatten the mixture evenly. Add plain loaf on top of spinach mixture and pat gently again to flatten. Layer carrot mixture on top, smooth evenly. Cut a piece of wax paper and lay directly over fish to prevent burning. Bake at 375 for 1 1/2 hours. Cool and then chill overnight.
