Preparation
Step 1
Melt the chocolate and margarine in a pan over very low heat. When the chocolate is almost melted, turn off the heat and set aside. The chocolate will melt from the heat of the pan.
Put the sugar, eggs and vanilla in a food processor or mixer. Process or beat until pale yellow and frothy. Add the chocolate mixture, and process, or beat on low speed for about 15 seconds, until thoroughly mixed. Add the flour, baking powder and salt, and pulse for about 10 seconds or beat on low speed until just blended. Cover and place in the freezer for 15 minutes.
Preheat oven to 350. Lightly butter the two cookie sheets or use nonstick sheets. Spread the powdered sugar on a large plate. Set aside. Remove the cookie dough from the freezer. Using a teaspoon, shape the dough into 1-inch balls. Roll in the powdered sugar and place them on the cookie sheets, 3 cookies per row in 4 rows. Bake each batch, one cookie sheet at a time, 10-12 minutes, or until the top of the cookies are almost firm.
Remove from the oven and cool on the sheet for about 3 minutes. Transfer with a spatula to a cooling rack.
