Ingredients
- 3 Tablespoons oil
- 1/2 to 1 teaspoon red pepper flakes
- 3 baby eggplant or 1 regular eggplant
- 1 red pepper -- cut into strips
- 1 medium onion -- chopped
- 3 cloves garlic -- chopped fine
- 3 Tablespoons rice vinegar
- 3 Tablespoons soy sauce
- 2 or 3 Tablespoons brown sugar

Step 1
Heat oil on medium heat and ad red pepper flakes. When the pepper flakes begin to sizzle, add the eggplant. Stir fry for about 3 minutes, until eggplant chunks are no longer light colored.
Add the red pepper, onion, garlic and stir fry for another 3 minutes. Add rice vinegar and soy sauce and then add brown sugar. Toss for a minute.
