  • 32 ounces frozen chopped spinach
  • 1 large onion -- finely diced
  • 3 cloves garlic
  • 8 chicken cutlets
  • 1/2 pound thin pastrami slices
  • 1/2 cup ketchup
  • 1/2 cup duck sauce

Preparation

Step 1

Saute onions over medium high heat until transparent. Add spinach and garlic and let cook for 5 minutes. Drain off as much liquid as possible.

Lay chicken cutlet on work surface and spread a 1" wide strip of spinach mixture. Layer a strip of pastrami and another layer of spinach mixture. Fold both sides over center, turn over, and place seam-side down in 9 x 13 inch pan. Repeat with remaining cutlets.

Combine ketchup and duck sauce and pour over cutlets. Cover and bake for 1 hour and 45 minutes at 350.
