Ingredients

  • 2 tablespoons olive oil
  • 1 carrot, chopped
  • 1 small red onion, chopped
  • 1 cup lentils
  • 1 can chicken broth (14 1/2 ounces)
  • 1 cup water
  • 1 bay leaf
  • 1/2 teaspoon salt, freshly ground pepper
  • 1 tablespoon orange zest
  • 4 chicken and apple sausages
  • 3 green onions, thinly sliced

Step 1

1. Heat oil over medium-high heat in a medium pot. Cook carrot and onion until just softened, about 5 minutes.

2. Add lentils, broth, water, bay leaf, salt and pepper to taste. Heat to a simmer; cook, uncovered, until lentils are done, about 20 minutes. Remove bay leaf, stir in orange zest. Set lentils aside, keep warm.

3. Meanwhile, grill, broil or microwave sausages according to package instructions. Remove to a cutting board; slice.

4. Place lentils on dinner plates; top with green onions. Arrange sliced sausages on top.

Notes: This was pretty good - the lentils were sort of bland, so I added lemon pepper and some chili flakes, which helped some. Also cut up the sausages into chunks and cooked right in with the lentils. Probably not a repeat, although not a terrible recipe.
