Microwave Mocha Self-Saucing Pudding

Ingredients
- 60 g butter
- 1 1/2 cups (225g) self-raising flour
- 1 cup (220g) caster (superfine) sugar
- 1/2 cup (50g) cocoa powder
- 3/4 cup (180ml) milk
- 1 cup (200g) firmly packed brown sugar
- 2 tsp instant coffee powder
- 2 cups (500ml) boiling water

Step 1
Place butter in a 3 litre (12 cup) microwave-safe dish; microwave on HIGH (100%) about 1 minute or until butter is melted. Stir in combined sifted flour, caster sugar and half the cocoa with all the milk; beat until smooth. Sift the remaining cocoa, brown sugar and the coffee powder evenly over the top, carefully pour boiling water over sugar mixture. Microwave, uncovered, on HIGH (100%) about 12 minutes or until just cooked in centre; stand 5 minutes before serving.
